News Summary

Chi-Chi’s, the iconic restaurant chain, has reopened its doors in St. Louis Park, Minnesota, marking its return after nearly two decades. The grand opening on October 6th attracted a large crowd, with patrons eager to enjoy both classic and new menu items. Spearheaded by Michael McDermott, the son of the co-founder, the revival reflects nostalgia and a response to current dining trends, offering signature dishes in a revamped atmosphere.

St. Louis Park, Minnesota — The iconic restaurant chain, Chi-Chi’s, has made a comeback with the official opening of its first new location in nearly two decades. The new establishment opened its doors on October 6, 2025, at 11 a.m. located at 1602 West End Blvd., which was previously home to Rojo Mexican Grill.

This return to the market signals a new chapter for Chi-Chi’s, which had ceased operations in 2004 following a series of ownership changes and bankruptcy. Notably, a hepatitis A outbreak in 2003, linked to green onions, was a significant factor contributing to its decline, resulting in four deaths and 660 illnesses nationwide.

The revival of Chi-Chi’s has been spearheaded by Michael McDermott, son of co-founder Marno McDermott. After announcing his plans for revitalization last year, he reached an agreement with Hormel Foods, which owns the Chi-Chi’s trademark, allowing him to use the brand name for the new restaurant locations.

The grand opening attracted a substantial crowd, including enthusiastic patrons from various states, such as a family from Orlando who came to relive nostalgic experiences associated with the restaurant. Reservations for opening day were fully booked, indicating strong local interest. Early reports showcased high enthusiasm, as over 2,000 people contributed $2.3 million to support the brand’s crowdfunding campaign.

Customers at the St. Louis Park location can look forward to a menu featuring both fan-favorites and new offerings. Highlights include:

  • Chi-Chi’s Original Chimichanga
  • Quesabirria Tacos
  • Seafood Enchiladas
  • Manchego Burger
  • Original Nachos Grande
  • El Burro Con Queso

In an effort to recreate the festive dining atmosphere that originally defined Chi-Chi’s, the new location boasts updated decor while incorporating memorabilia from earlier establishments. Complementary chips and salsa will be part of the dining experience, enhancing the welcoming ambiance for guests.

The operating hours for the restaurant are

  • 11 a.m. to 10 p.m. on Mondays;
  • 11 a.m. to 11 p.m. on Fridays and Saturdays;
  • 11 a.m. to 9 p.m. on Sundays.

Parking is available in an underground ramp, and the restaurant is conveniently accessible by public transport. Michael McDermott expressed a commitment to bringing energy and fun to a new generation of diners, indicating aspirations for future expansions and additional locations.

Chi-Chi’s was first established in 1975 by Marno McDermott and former Green Bay Packers player Max McGee. At the peak of its popularity in the 1990s, the chain boasted over 200 locations across the nation, serving as an introduction to Mexican cuisine for many in the Midwest. Its return not only reflects nostalgia for its rich history but also responds to current dining trends.
