At 36 years old, Tsan brings 18 years of experience in the restaurant industry to his new venture. He began his culinary journey at the age of 18 as a Chinese food delivery driver, initially viewing the industry merely as a job opportunity. Over the years, Tsan discovered his passion for food and the happiness it can bring to people. He operates Norigami, an eight-seat reservation-only sushi and handroll restaurant at Plant Street Market, and has garnered recognition as a three-time Michelin Bib Gourmand recipient.

Kappo Tsan will feature a menu that expands on Tsan’s offerings at Norigami, incorporating more hot dishes alongside traditional sushi. This new restaurant will have 30 seats, including booths, a 14-seat walk-up bar, and a six-seat Kappo bar designed for an interactive dining experience. The restaurant aims to encourage guests to be adventurous with flavors and ingredients.

The Southwest Orange area has been experiencing significant growth, making it an ideal location for Kappo Tsan. The restaurant will boast an extensive sake and wine list with a prix fixe menu and à la carte options inspired by local seasonal ingredients. À la carte dishes will be priced between $30 to $40, while the prix fixe menu will range from $150 to $180. Signature dishes are expected to include Taiwanese beef noodle soup, Mapo tofu, shirako with dashi butter, grilled tuna tomahawk, and kakuni.

Tsan, who has a strong culinary background through his previous work at renowned restaurants like Marrimoto Asia and Kabooki Sushi, will be supported by an esteemed team of restaurateurs and chefs. Johnny and Jimmy Tung, along with sommelier Benjamin Coutts and former Hanamizuki chef Toshi Kishimoto, will lend their expertise to help establish Kappo Tsan as a premier dining destination.

The restaurant will not only focus on its culinary offerings but also on creating an impressionable experience through music and ambiance. Tsan aims to uplift the overall dining experience, creating a space where guests can enjoy exceptional food in a captivating environment.

Despite the flurry of activity surrounding the new restaurant, Tsan will still manage recipe ordering at Norigami, with sous chef Austin Batista overseeing the day-to-day operations at that location.
